Chocolate Peanut Butter Cookie Bars Recipe

Cookies and holidays go hand-in-hand, right? Of course they do! So, here is a fun (and easy) new recipe that takes your basic sugar cookie from “blah” to WOW in just a few simple steps. Watch out, because you won’t be able to stop eating these Chocolate Peanut Butter Cookie Bars! Oh yeah, and check out the giveaway at the bottom!

Normally I would launch into a story about how much I love holiday baking, but just look at these heavenly morsels of goodness. They’re ridiculous. So first things first, let’s talk about how to make them. Here is what you need:

  • 1 17.5oz package Betty Crocker Sugar Cookie mix (score a coupon here!)
  • 1 stick butter
  • 1 egg
  • 1 jar creamy peanut butter
  • Chocolate candiquick melting chocolate

Here is what you do:

Preheat your oven to 350 degrees. Next, make your cookies as listed on the package. You could make your cookie layer from scratch, but honestly? Ain’t nobody got time for that. I’ve got a packed schedule pretty much all the time, so anything that I can use that helps me save some is my friend. Which brings me to the Betty Crocker Sugar Cookie Mix I happened to see at Publix the other day. Hello, could it be any easier? I don’t think so! All you do is add butter, egg, and cookie mix – then stir. That’s it! You can keep your cookies like that and cut them out, and they will be delicious but I’m going a few steps further.   

Grab a nonstick baking pan and cover it with some nonstick spray, then pour in your cookie mix. Spread it evenly throughout your pan, making sure you have a smooth surface, and then bake until you have a nice golden brown color on top. Once baked, set aside to cool completely.

After your cookie sheet is cooled, cut it into “bars”.

Now grab your peanut butter and spread a layer over each bar. You can go thick or thin – I like a little in between!

Your final step is to drizzle your chocolate. I use CandiQuick inside of a Ziplock bag with the tip cut off, but if you have piping bags they work too. Drizzle as much as you want in a criss-cross pattern, cover with sprinkles, let your chocolate harden and then dig in!

Don’t these just look amazing? Now, I’m not tooting my own horn, but to me they taste just like my favorite Girl Scout cookie of all time. You know what I’m talking about – Peanut Butter Patties of course!

Be sure to make enough to share, and keep them fresh with Ziploc! I always buy a few extra Ziploc containers for the holidays – they are great for packing leftovers and sweet treats, plus they are perfect to decorate and gift! I just love gifting cookies – not only do they say “I’m thinking of you”, but there’s just something about it that spreads cheer – one batch at a time!
