Easy meals are where it’s at in my house, especially since school is about to start. Being a work at home mom means that constantly struggle with a work-life balance, and the lazy days of Summer are just about over. Things are about to kick into high gear, and it’s time for me to pull out my favorite easy meals to serve while we adjust to our new schedule. This taco bowl packs a big flavor and is loaded with goodness from fresh veggies and protein. It is full of flavor with all my favorites – sweet potatoes, zesty rice, chopped green chilis, and Avocados from Mexico. (Get coupons HERE!) This recipe is great for a family dinner or even a lunch on the go since the whole thing is in one dish, and it is easily customizable to your own individual taste.
30 Minute Taco Bowl
This recipe will take you 20 minutes from start to finish, and really the only reason it takes that long is because of the sweet potatoes. But, I’d say that thirty minutes is perfect when you’re cooking for the whole family! Plus, there aren’t many dishes to wash, so that’s another awesome thing! This recipe serves four, but you can adjust it to however many you need. Here is what you need:
- 4 cups 10-minute rice (you can use regular rice, but 10-minute rice is key to the timing of our recipe)
- 1 can Old El Paso chopped green chilies
- 1 large sweet potato
- 1 tomato
- 1 Avocado
- 1 cup whole kernel corn
- fresh chopped cilantro to taste
The first step is to start cooking your sweet potatoes. Cube them, wrap them in aluminum foil and pop them in an oven heated to 375 degrees for fifteen minutes. Now start your rice. Next, take your veggies, cut them all up then set them to the side. Open up your beans and rice and you can either serve them fresh out of the can or heat them up in a pot. I serve them right out of the can because I like to save time. By this time your rice should be finished, so grab your chopped green chilies and stir them in, mixing thoroughly. You can also add a little taco sauce here if you want.
With your rice all mixed, set it aside and then take out your sweet potatoes. pour them in a skillet and saute’ on medium-high for a final five minutes until they are browned on the edges. After that, the only thing left to do is build your taco bowls! I love piling everything up on top and adding taco chips, but my husband is a mixer so he blends everything together. Either way you fix it, it will be delicious!
