You guys, my baby boy is starting Kindergarten this week and I need a hug! I am super excited for this next step, but I am so not ready for it. Realistically it’s awesome, but this is a big first for all of us! I need to take my mind off of school prep and the stresses that come with it, and kitchen therapy is always great for that, so last week I spent some time revamping one of my all time favorite childhood sweet treats. I know strawberry shortcake is already pretty close to perfection, but I’m not a kid anymore, so I decided to take it up a notch and turn it into a popsicle!
I don’t know why I never thought of this before. Seriously, it is so simple but so incredibly amazing! It has just four ingredients, and aside from mixing and cutting there is very little prep involved. I used to love creating elaborate dishes, but now that I’m a mom I barely have time to even throw together a sandwich, so I’ve gotten smart about my time in the kitchen. I have found that some of the best dishes are often the simplest ones, and as long as I have quality ingredients I can make anything taste amazing. Now let’s get started! For this recipe you will need:
- 1/2 carton Breyers® Natural Vanilla ice cream
- 1/2 Sara Lee® All Butter Pound Cake
- 1/2 cup strawberry topping
- 1/2 cup milk
- Popsicle mold
The first thing you want to do is take your pound cake and cut it into 1/2 inch cubes. I know this isn’t a traditional shortcake, but it is perfect here because we need a thick cake that doesn’t soak up all the moisture and get soggy like a shortcake does. Plus the butter taste goes really well with our ice cream and strawberries. Make sure to keep it frozen until just before you need to cut it so that it doesn’t soften up, and for the half that you aren’t using you can save it for later or eat it alone because it is just that good!
Once we have our cake squares cut, set them aside and then combine your Breyers ice cream and milk in a blender or food processor. You don’t necessarily have to use Breyers here, but I love their high quality ingredients and the fact that their milk and cream is from cows not treated with artificial growth hormones. Plus I grew up with them so I’m loyal. Anyway, blend your ice cream and milk until you have a smooth, creamy mixture.
Now stir in your cake pieces and strawberry topping.
Mix gently with a large spoon until you have it *just* spread evenly throughout, and then pour it in a popsicle mold. Chill for at least two hours, and then enjoy!
You can find everything you need for these amazing fruit pops at Publix, and if you feel like mixing things up you can swap out any of the flavors.
