I have a heck of a sweet tooth, and my all time favorite dessert is anything frozen and chocolatey. Last week I was in the mood for something indulgent so I headed to the ice cream section of Walmart, but I just couldn’t find what I was craving. Sure, there were frozen treats full of cookies, swirls of caramel, and chocolate chunks, but when I eat dessert I want to go all out. I want more than just a “loaded” ice cream bowl. So I thought “Oh hey, I’m a maker. I can do it better”. I took a stroll over to the ice cream section, picked up a tub of Blue Bunny Vanilla Bean ice cream and a few more ingredients then headed home to create something amazing. And guess what? Amazing isn’t even good enough to describe what I came up with. It was epic. So, without further adieu here is a little something I like to call “Cookie Butter Cones”. Did you read that? Cookie Butter. Oh yes, I went there.
Chocolate Cookie Butter Cones
This will take you around 15 minutes to prepare, an hour to “set” in the freezer and it makes 8 cones. Here is what you need:
- 1 tub of Blue Bunny Vanilla Bean ice cream.
- 1 cup cookie butter – you can find this in the peanut butter section of any store. If you can’t find it, caramel works just as well.
- Quick-setting chocolate candy coating.
- crushed walnuts
- sugar cones
- a blender/mixer
The first thing you will need to do is mix your ingredients, so combine ice cream and cookie butter in a blender and then *gently* mix it for a few seconds. If your blender has a paddle attachment that will work best, but it isn’t a must for this. The main idea is to make sure it is meshing but not turning into a smooth single mixture. You want to be able to see “ribbons” of your cookie butter. Does that make sense?
This is what it should look like in the end. See how it isn’t completely mixed? I love how amazingly the flavors of vanilla and cookie butter go together – and I’m a total flavor snob, so the only vanilla ice cream I ever get is vanilla bean. See those little specks? They’re a sign of pure deliciousness. And since I choose quality I went for Blue Bunny, because they make a mean vanilla bean ice cream!
Our other key ingredient here is cookie butter. I’m not even going to get into how mindblowingly awesome this little slice of heaven is, but let’s just say if you haven’t tasted it you have been missing out. Do you know that a year ago I had never heard of it before? Yep – poor clueless me. Then, BAM! One taste and I was a goner.
Your ice cream might have melted a tiny bit while mixing, so pop it in the freezer for a few minutes while you get the rest of your supplies ready. I like to make sure I have everything set out before moving forward, so I set out a small plate to “catch” my chocolate on and I also make sure I have somewhere for my cones to stand in while they harden. I wish I had some sort of grate or screen that I could stand them up in, but I don’t so I am using copper mugs that fit two cones each in. So once everything is ready and your ice cream is frozen again it’s time to set out your cones and move on to the next step!
Grab an ice cream scoop and use it to make a ball on top of your ice cream cones. Don’t worry about it being perfect – ain’t nobody got time for that, and really, as long as it stays on top of your cone it can look like whatever the heck it wants to. See? Mine totally look like blobs!
Now take your chocolate coating and pour/dip/spread/whatever so that you coat the whole area of your ice cream.
Then sprinkle it with nuts and stand it up in your cup/whatever you are using, put it back in the freezer for an hour, and then you can eat it!
Oh.My.Gosh. Seriously??? I just died and went to drumstick heaven. Just look at that gorgeous, frosty chocolate. YUM!
