Rainbow Party Planning

Lately I’ve been really into creating fun party spreads. It could be because Summer is birthday season around here, but I think it’s probably just that I love making things pretty and festive. I normally do my parties outdoors, but since it’s breaking into the 100’s out there right now I thought I would share a cute and easy rainbow spread to help bring the sunshine INside and make being stuck indoors a little bit brighter! After all, who wants to party when they’re sizzling? Not me! So lets talk about easy ways to bring the fun inside.

The first thing I did for my party spread was to find a nice bright spot that had easy access and good amount of space, then I set up my table. I’m using one of those folding party tables here, and if you don’t already have one I highly suggest purchasing one! They come in handy for SO many different things, are easy to store and really inexpensive too! After I set up my table I added a simple white tablecloth because I wanted my food to really “pop” as the star of the show. Since this is a rainbow party spread, I made sure to choose foods and recipes that were bright, colorful, and really fun to make. I also made sure they were convenient and not very steps intensive, because the last thing I want is to spend hours preparing food  when I’m going for a simple and fun party, am I right?!

When you think of rainbow colored treats what’s the first thing that pops into your head? For me it is of course M&M’s®. I mean, hello, they are literally bags of rainbows! They come in all kinds of sizes too, but Sam’s Club carries the XXL bags so of course I had to pick up a bag each of M&M’s® Crispy, M&M’s® Original and M&M’s® Peanut to make sure I had all my bases covered for my spread. With the XXL bags I didn’t have to worry about not having enough, and I even have some left over for my next party!

Once I found the star of my party, I began to think about what I could include in my spread that would use M&M’s® and also what would go with them. I love cupcakes, but I feel like cupcakes at parties are a little boring, so instead I decided to make my favorite blondie bars and filled them with M&M’s® Peanut. They were super easy to make and turned out absolutely delicious!

Here is what you need to make them:

  • 1 stick unsalted butter
  • 1 egg
  • 1 cup brown sugar
  • 1 cup flour
  • 1/3 cup crushed chocolate cookies (optional)
  • 1/3 cup rainbow sprinkles
  • 1/2 cup M&M’s® Original

All you need to do for these is preheat your oven to 350 degrees, mix up all ingredients in a large bowl, then pour that mixture into an 8×11 dish and bake 20 minutes or until you have a crispy brown crust.

I used some leftover M&M’s® Peanut and M&M’s® Crispy as decorations by pouring them in tall glass jars, and they looked fabulous!

For the rest of the table spread I kept my rainbow theme going with multi colored popcorn (after popping add a mixture of warm corn syrup, sugar and food coloring), multicolored melon balls, rainbow gelatin wedges, fruit punch, and cute sprinkle pretzel rods.
