It is no secret that I love to snack, and while it isn’t exactly the best habit to get into, I always try to choose something that isn’t going to leave me feeling guilty. One of my favorites lately is popcorn, but I am so tired of my choices being butter, butter or more butter. I mean, how’s a girl supposed to fit into her skinny jeans with that? I usually opt for a plain variety (aka bland) and dress it up with toppings, but when I saw the new Skinnygirl popcorn at Walmart that features fun flavors like Lime & Salt I did a total happy dance! Sophisticated flavors and better ingredients with only 25 calories per cup? Why didn’t anyone think of this sooner? Oh yeah, and you know how with popcorn you just keep eating until the bag is empty? Skinnygirl Popcorn comes in mini bags! I grabbed a few boxes, headed home and popped some up. Now, I enjoy a freshly popped bag of popcorn as much as anyone, but do you know what my second favorite indulgence is? A sweet, creamy fruit tart. Oh.my.gosh do I love tarts, but all that sugar and cheese is so bad for my healthy eating plan that I almost never make them. I love spending my time creating new dishes, so I thought it would be fun combine these two treats into one amazing creation.
Skinny Popcorn Crusted Fruit Tart
Yes you read that right. I totally made a popcorn fruit tart. And you know what? It was delicious! The bold lime of the popcorn goes amazingly with each piece of fruit, and besides switching out the crust I also gave the middle cream part a makeover as well. Are you drooling yet? You should be. You will need:
- 1 bag Skinnygirl Popcorn in Lime & Salt flavor
- 3 tablespoons honey
- 1/2 cup vanilla Greek yogurt
- brown sugar
- 2 Kiwi fruits
- package of strawberries
- rasberries
- blueberries
- tart pan
- wax or parchment paper
So the first thing you want to do is pop your popcorn. This is going to be hard to resist because the lime smell is just heavenly, but try. (It’s okay, you can sneak a few.) Next pop it in a food processor, pulse for around 10 seconds and then mix in your honey with a spoon. You want to use enough honey that your popcorn is covered, but not too much that the taste is very noticeable – the honey is mainly meant to be for holding your popcorn together. Now pour it into your tart pan.
Doesn’t that look like perfect popcorn? Your next step will be to grab your wax paper and firmly press the popcorn into the bottom and sides of your tart pan until you have a smooth “crust”.
Mix the Greek yogurt and brown sugar together and spread evenly onto the crust.
Once that is spread, peel and cut your kiwi into slices and place them evenly around your tart to form a single layer.
Now slice your strawberries and position them in a single ring near the center of your tart pan.
After that all you have to do is add some raspberries, blueberries and chill in the fridge for about an hour. You will LOVE how well all the flavors go together, and it is the perfect treat for a movie night with your besties, as a party dish or even just hanging out at home. And while I am no food safety expert, mine kept well in the fridge for around 3 days. If a fruit tart isn’t your thing or you want a super quick snack then just grab a bag and pop it in the microwave. You aren’t limited to just the Lime & Salt either, they also offer a more traditional Butter & Sea Salt flavor! And guess what else? My kids LOVE it too!
