You already know that I have a heck of a sweet tooth, but even with a taste for sweets I try to make them as healthy as I can by swapping out the bad stuff. I love using ingredients that I can feel good about – the kind of ingredients that I would be comfortable serving to my babies because I know they are natural and free of harmful pesticides, antibiotics and hormones. I was in the mood for some frozen yogurt pops the other day and decided to see what my local supermarket had. Guess what? There wasn’t much to choose from unless I wanted to have sugar, corn syrup and all kinds of artificial stuff as well. Then I thought “Oh hey, I’m a maker. I can do it better” so I took a stroll over to the yogurt section and picked up a Lifeway Kefir Cultured Milk Smoothie and a few more ingredients then headed home to create some amazing frozen pops. Inspired by my favorite cookie of all time, they combine sweet and tangy Kefir, shortbread, toasted coconut, chocolate and caramel into a decadent (but better for you) popsicle I like to call “Skinny Samoa Pops”. Skinny Samoa Pops
These pops will take you about 20 minutes to prepare and 2 hours to freeze. This recipe makes 8 standard sized pops. Here is what you need:
- 1 bottle of Kefir Lifeway Cultured Milk (plain flavor)
- 2/3 cup crushed shortbread
- 1 cup toasted coconut
- chocolate quick coating
- caramel quick coating
The first thing you will need to do is toast your coconut. You can buy pre toasted at the store, but I LOVE making it fresh. To toast it all you have to do is set your oven to 325 degrees, spread out your coconut in a thin layer on a cookie sheet and pop it in the oven for around 8 minutes or until golden brown. There is nothing quite like the amazing smell of fresh toasted coconut fresh from the oven!
Next combine your Kefir, shortbread and 1/4 cup toasted coconut in a bowl and mix thoroughly.
I love using Kefir as a substitute for yogurt. It isn’t as sweet, but it is packed with probiotics, calcium and is 99% lactose free. It is product from cow’s milk that it completely GMO free too, so you can drink it with confidence!
Pour the mixture into your popcorn mold and freeze for two hours. I made these during nap time so I spent my waiting time watching a movie in sweet, solitary silence while they were freezing. Once they are ready you will want to take them out of the mold, set them out on a plate (side by side is great if you have a long plate) and the drizzle with chocolate coating. Next sprinkle on some toasted coconut and pop it back in the freezer for about two minutes.
Repeat that with your caramel and you are finished. No go curl up with one of these babies, put on your favorite chick flick and feel great about yourself!
