Fruits and vegetables are a staple of my everyday diet. Having a vegetarian household means that I am constantly figuring out new ways to serve them but lately I’ve been in a recipe slump. I love cooking, but with the sun out and Summertime calling my name it is hard to find quick and easy dishes that are full of enough good stuff to keep me going all day. I could just grab some fries at the latest drive through and call it a day, but all that is going to do is give me a heavy, tired feeling and I don’t want that! When I am choosing recipes to prepare during the warmer months there are a few things that I am for: Time, ease, and ingredients. I don’t like to spend too much time in the kitchen during my favorite season of all, so I really want something that I can whip up in under 30 minutes. Next, I don’t want something that has a lot of steps or is really involved because I don’t want to end up spending forever cleaning up after it. I also look for ingredients – is it full of fresh ingredients that are going to keep me fueled for the day? Each of these recipes have those three things in common – they are easy, only have a few steps and are packed to the gills with amazing fresh fruit and/or veggies.

I have never thought of doing a hummus pizza like this, and a great thing about it is that I can switch up my toppings to anything under the sun! Oh yeah, and it takes just 15 minutes to make!

And then I just HAD to include my very own take along pasta salad that is bursting with veggies for when I’m on the go. It doesn’t get much easier than this one!
