I whipped up these delicious salsas as part of a sponsored post for Collective Bias and their client. All opinions are my own.
One of my favorite things to eat in the warmer months is salsa. I love it chunky, full of fresh veggies and bursting with flavor. I love how versatile it is, and I love that the right kind of salsa can be smothered on anything and still make it taste amazing. You could call me a salsa snob and I would probably agree. But seriously, what on earth is better than sitting on the patio with the family, relaxing in the warm evening and eating a yummy taco dinner with homemade salsa? Not much! It has been really nice out lately, so we have started taking our dinners outside when we can and earlier this week we had a fun taco night complete with a trio of fresh salsas I whipped up with my brand new Ninja blender. They were absolutely delicious! And guess what? I am going to show you how to make them!
I have been wanting a new blender for a while now since my old one stopped working almost a year ago, and the other day I made my way to the kitchen gadget section at Walmart while picking up our taco night supplies. I already knew I wanted a Ninja based on their reputation, but I really had no idea just how many different models they had. I ended up going with the Ninja Kitchen System Pulse that combines blending, food processing and juicing all in one. Oh yeah, and it only cost $79. Talk about awesome!
And now back to our night of taco bliss. We are vegetarians, so we eat a lot of veggies. And we absolutely LOVE black bean tacos. So on this particular occasion we had black bean tacos with Old El Paso Mexican Rice, corn, shredded Monterrey Jack cheese with tomato, strawberry/mango, and avocado/black bean salsa. The recipe for each salsa is very simple, and each has the same basic ingredients so you don’t have to worry about spending too much time in prep. My favorite one is the strawberry and mango – I adore the mix of sweet and spicy on top of the earthy flavor of the black beans. Here is how to make it:
Strawberry And Mango Salsa
- 1 cup strawberries
- 3/4 cup fresh mango
- 1/3 cup red onion
- 1/3 jalapeno
- 1 tbsp cilantro
- pinch of salt
- lime juice to taste
All you have to do is cut your strawberries into halves and peel and cut off the portion of mango you want to use. Drop them all into your Ninja along with the remaining ingredients and pulse 4 times. That’s right, just FOUR times. And now you are done!
Now pour it into a bowl, garnish with a bit of cilantro and serve. Just look at those juicy chunks of fresh fruit, isn’t it beautiful?
For the avocado and black bean salsa you will need two avocados, half a can of black beans, 1/4 red onion, half a jalapeno, a handfull of cilantro, pepper, and lime juice. To make it, take all your ingredients except black beans and pulse them together twice so that they are *just* diced (I love my avocado foods very chunky).
After that pour the mixture into a bowl and add your black beans, stirring until evenly blended. Delicious! This one is fabulous served with corn and a nice spicy sauce.
That brings us to our final salsa. This is a classic tomato salsa that will go with any kind of taco you choose and you will basically use the same method for this as with the strawberry salsa above. So swap out your fruit for tomatoes, add in a hefty amount of black pepper, sprinkle in some cumin, add salt and pepper to taste and pulse it all together until it is very finely blended.
And now you have three amazing salsas that are perfect for your next taco night, whatever your flavor of choice might be. So go ahead and whip up your favorite tacos and have a feast!
