Fruity Pebbles Blondie Bars

Spring means warmer days and beautiful skies.  Things are blooming, birds are chirping, and I have SO many great new dish ideas!  One of my absolute favorite parts of Spring is the color everywhere, so a lot of my inspiration comes from that.  In my backyard alone we have 8 different flowering plants with SO many colors!  I wanted to come up with a fun and easy dessert inspired by the bright and playful colors of Spring, so naturally I picked up my favorite childhood cereal at Walgreens and made these yummy Fruity Pebbles Blondie Bars!  Don’t they just look delicious?  Check out my recipe below!

Fruity Pebbles Blondie Bars

Here is what you need:

  • 1 cup Fruity Pebbles cereal
  • 1 box yellow cake mix
  • 1 stick of butter
  • 1 egg
  • 1 bag white chocolate chips
  • coconut (optional)
  • nonstick pan

First combine your cake mix, butter and egg in a large bowl.  Mix thoroughly and then add in your Fruity Pebbles.  Stir until evenly distributed throughout the dough.

Divide your dough mixture in half.  Put one half of it in your brownie pan and firmly smush it down.

Now sprinkle a layer of white chocolate chips evenly over your dough.

Lastly, spread the other half of your dough evenly on top and pop it in the oven at 350 degrees for 25 minutes or until you have a nice golden brown color.

Let them cool for a few minutes, slice into squares and serve!  All the different flavors go really well together, and the pebbles give it a fruity crispiness that is just delicious!

These are great to serve at parties or gatherings, and you can even wrap them up in individual goodie bags with a cute ribbon to put in Easter baskets!  Another great thing about these bars is how versatile they are – you can easily swap flavors if you want.  Don’t like yellow cake?  Try Devil’s Food cake.  Not a fan of coconut?  Why not use nuts?  You can even use chocolate or butterscotch chips in place of the white chips.  Yum!

Fruity Pebbles have been my favorite cereal for as long as I can remember, and they really make this dessert pop!  You can get them and other Post cereals at Walgreens for $1.99 each until April 5th, so get them while you can!
