The weather has been really cruddy lately. Between snowmageddon and the rainy, sludgy aftermath that lasted an entire week we have gone absolutely stir crazy around here! We don’t normally get much bad weather, so when I heard that we were in for a big winter storm I went out to Walmart to stock up. Judah pretty much lives outside, so in an attempt to make his time indoors more bearable I picked up the new Jungle Book Blu Ray combo pack and we had a fun movie day complete with tropical treats, jungle vines and more! Read on for an awesome recipe and a few great ideas that helped us beat cabin fever!
One of the first things I did for our fun filled movie day was to make sure I was stocked up with the bare necessities – fresh fruits and veggies. It is easy to snack all day when you’re stuck indoors, so it is important to have a variety of healthy options. I made these delicious mango veggie burgers with pineapple fries inspired by The Jungle Book and they were ah-maz-ing! Besides being full of fresh fruits and veggies, they are delicious and my kids love them!
Baloo Burgers (Tropical Veggie Burgers)
These burgers follow the same recipe as my sweet potato sliders, but with a few ingredient switches. Here’s what you need:
- 2 sweet potatoes
- 1 can white beans
- 1 mango
- 1/3 cup flour
- pinch of salt
- buns
- cilantro
- red onion
- cheese
Cut up your sweet potatoes and half of the mango into chunks. Stick them in the oven at 350 degrees with a teaspoon of water for 15-20 minutes. After that combine those with your flour and pinch of salt in a bowl and mash it all up with your fork. Form patties and cook over medium/high heat in a skillet for 6-8 minutes on each side. While they are cooking you can make your mango salsa.
Put your burgers on a bun, top with your favorite cheese and add a spoonful of mango salsa. Pair that with these yummy pineapple fries and you have a delicious, kid friendly tropical meal that can’t be beat!
While I was busy cooking everyone else was busy creating. Keeping with the jungle theme, I thought it would be great to make a tent for the kids to watch the movie in. You can see the tutorial for the tent next week, but it was super easy! My husband bought a few cheap pvc pipes with connectors, drilled a few holes, and with the kids help it was up in no time.
You can’t have an awesome jungle tent without decorating it in jungle decor of course, so they painted a bunch of leaves that we cut out from printer paper and strung them up to make cute vines.
After that the only thing left to do was to serve our yummy tropical dinner and enjoy some much needed down time together. The kids loved the movie – they happily sang and danced along, and didn’t even notice that they were stuck indoors for the day.
