It is a brand new year, and with that brings new beginnings, new goals, and for most of us a focus on cleaning up our lifestyles. I know that I need a menu revamp after all the indulging I have done the past few month (my blog has been in sweets overload lately!) and it is time for me to get back to my normally healthy diet. I adore full flavored foods, and a lot of people have the misconception that full flavor = full of bad stuff. Well guess what? That isn’t the case if you do it right, and this Sweet & Spicy Pico with Goat Cheese is here to prove it! I am a huge fan of anything tomato, and you already know about my love affair with Goat cheese, so check out my newest snack obsession and learn how to make it for yourself. I could seriously eat this all day, it is that good!
Sweet & Spicy Goat Cheese Pico
You will need:
- 2 tomatoes
- half a red onion
- one jalapeno (no seeds)
- cilantro
- fresh lime
- pepper
- 1/2 tsp olive oil
- dash of fresh garlic
- Goat cheese
This recipe is super easy. It is so easy that it only takes 3 steps. Hooray! So here is what you do:
1. Dice up your tomato, onion, jalapeno and cilantro and combine in a bowl with your pepper, olive oil and garlic. Squeeze in lime to taste.
2. Stir it up, pour it in a dipping bowl and set it on a bed of tortilla chips.
3. Top with a generous amount of Goat cheese and eat until your heart’s content!
Wasn’t that easy? The jalapeno makes it a little spicy, but the Goat cheese balances it out with sweetness for a match made in heaven! Easy Whole Wheat Tortilla Chips
What you need:
- package whole wheat tortillas
- pinch of salt
- chili powder
- olive oil
Cut your tortillas into equal triangles and arrange in a single layer on a baking sheet. Brush with a *tiny* bit of olive oil, sprinkle on your spices and pop int the oven at 350 degrees for 15 minutes.
Take them out when they are a nice golden brown.
Let them cool for a few minutes and serve. Ta-da! This snack is a great way to stay on track with your nutritional goals, and it is delicious to boot!
