In honor of the foodpocalypse that is happening on my blog right now I have another great holiday recipe to share! This creative take on a classic pumpkin roll is delicious and perfect for your Thanksgiving gatherings! It is pretty simple to make and only takes a few ingredients. I am not going to do my usual step-by-step in pictures with this one, but I will still share my recipe. PLUS I will share some info on the Good Cook Ultimate Thanksgiving Twitter party and how you can win a $200 Thanksgiving basket for the big day!
Chocolate Pumpkin Rolls
- Here is what you need:
- 1 box chocolate cake mix
- 3 large eggs
- 1 1/2 cup water
- 3/4 cup vegetable oil (adjust according to your cake mix directions)
- 1 box instant chocolate pudding mix
- 1 cup pureed pumpkin
- 4 oz cream cheese
- 1 tsp cinnamon
- 1/2 cup powdered sugar
1.) Preheat your oven to 325 degrees. Mix your cake mix, water, eggs, oil and pudding together in a large bowl. Make sure you get all the lumps out!
2.) Pour a very thin layer into a baking pan. I * love* my new Bonny brownie pan for this. It is the perfect size and has convenient little handles to grab it out of the oven!
3.) Cook for 11 minutes. You may cook it more or less depending on how thick you have poured, but I made 4 of these the other day and 11 seems to be the magic number.
4) While that is cooking, make your filling. Combine your pumpkin, cream cheese, cinnamon and powdered sugar in a bowl and mix until smooth. It is best to soften your cream cheese up a little bit before you do this step so it is easier to work with. I wanted fresh pumpkin for this so I could use my awesome new pumpkin scoop but I couldn’t find any so I used canned.
5.) Once your cake is cooked lay it onto a piece of wax paper (you might need to spray it with nonstick spray).
6.) Spread your pumpkin mixture onto the cake in a thin but even layer.
7.) Roll it up carefully, fold over the ends of the paper and stick it in the freezer overnight.
8.) Serve and enjoy! I love this frozen, but it is best to let it thaw for 30 minutes before you eat it.
Isn’t it delicious? While I do love traditional pumpkin rolls, I like to go “out of the box” with my recipes and I know that I will be making this one for years to come!
