When the weather is hot and days are filled with pool lounging, family trips and holiday picnics the last thing I want is to have a stomach full of heavy and greasy food. Summer is the perfect time to lighten up your menu, and I have a great recipe for pineapple salsa that is not only healthy but is also my go-to party dish in the warmer months. This is one of my favorite dips to make and I love way the flavors complement each other – it has just the right amount of sweet and spicy for a great combination. Oh yeah, it takes less than ten minutes to make!
Start with one pineapple (I get the pre-cored ones to make life easier), a red onion, jalapeno, lime and some cilantro. Chop up the entire pineapple and put it in a large bowl.
Next chop up half of the onion, half the jalapeno and a hand full of your cilantro. Add them to the bowl.
Squeeze in some lime to taste, add a pinch of black pepper, mix and chill in the fridge for about an hour. You *can* eat it right away, but it tastes much better if the flavors have a chance to all mesh together!
Serve this dip with your favorite tortilla chips, in tacos, as a light nacho topper or any number of possibilities! If you want to jazz it up (not like it even needs it) try adding in some Tabasco sauce, mango pieces or even a few black beans. No go enjoy your light and healthy new dish!
