When it comes to family meal prep, I like to save time wherever I can. Don’t get me wrong, I love coking, but when I spend my days photographing food, the last thing I want is to dirty up even more dishes. Easy is my favorite word when it comes to our meals, and it doesn’t get much easier than these amazing, fully loaded sheet pan nachos! I’m sure you have heard about sheet pan meals being super trendy right now, but if you haven’t, the gist of it is to save time and dishes by making an entire family meal on a single baking sheet. Amazing, right? And so smart. I feel like I am busy all day every day, and if I can save some time AND dishes by doing something as simple as pulling out a sheet pan I am all in! I have made a few great sheet pan meals over the past few months, but my first one ever is probably my favorite: Family style nachos! Read on for the full recipe, and then kick back and do something relaxing with all the time you are going to save on cleanup!
Before you begin, let’s talk best practices. It is important to use the right bakeware with this kind of cooking. I have a lot of older baking sheets that I always cover with foil or a silpat, but for my sheet pan meals I need something a little better, so I grabbed a few jelly roll pans from Chicago Metallics. These high quality pans are perfect for any type of baking, and with the double coated non-stick surface, I don’t have to use a barrier like foil or parchment. Chicago Metallics also has a huge selection of other bakeware, from bundt pans to silicone cupcake liners, so be sure to check out their full store!
Here is what you need for the nachos:
- 1 bag restaurant style tortilla chips
- 1/2 can black beans, drained
- 2 tbsp taco seasoning
- 1/2 can whole kernel corn, drained
- 1 cup cheddar cheese or mixed Mexican cheese
- 1/4 onion, diced
- 1 tomato, diced
- 1 avocado, diced
- 1 lime
- Cilantro to taste
- 1 tsp cumin
- Melted queso blanco cheese
- Fresh sliced jalapeños – optional
Start by preheating your oven to 350 degrees. Spread out a layer of chips on your jelly roll pan. Next, mix together your beans, cumin, and taco seasoning, then sprinkle them all over your chips.
Add corn and cheese, then bake for 10 minutes until cheese is melted.
Remove from the oven, add on layers of tomato, onion, avocado, cilantro, and jalapeños.
Return to oven for 5 minutes, and while they are cooking, melt your queso cheese in the microwave for 1 minute. Take nacho sheet out of the oven, drizzle cheese all over the top, and serve family style!
The great thing about nachos is that you can add as much or as little s you want to the, and they will always taste great! Here are some other great topping ideas:
