Perfect Parfait Yogurt Pops

Frozen yogurt parfait pops are full of fresh fruit, and made with smart ingredients for a healthy treat!

The sun is out, the pool is open, and we are about to dive right in to Summer! I am super excited that it is finally here, and I am ready for lazy days, adventures, and lots of family fun. This is my favorite season for many reasons, but the food is a big one. I adore Summer time food with a big pink puffy heart. I love the freshness of eating from my own garden, I love how refreshing everything is, and I love frozen treats. If you’ve been a reader here for a while, then you know I go a little popsicle crazy right around this time, so I’m kicking off this year’s frozenpalooza with these gorgeous parfait yogurt pops made from fresh fruit and Annie’s new whole milk yogurts. Read on for the recipe!

Here is what you need to make 6 large popsicles or 8 small ones:

  • 2 Packages Annie’s strawberry Whole Milk Yogurt
  • 2 cups fresh strawberries
  • 1 cup homemade granola
  • 3 large kiwis
  • popsicle mold of choice

Now, first things first – let’s talk about what makes these so fabulous. I started with a base of the new Annie’s Whole Milk Yogurt after seeing them at Publix with a 2/$5 deal. I am a huge fan of anything Annie’s, so these were a great find! We usually keep Greek yogurt stocked at our house, but I’m a fan of trying new things, so I gave it a go. It is made with Organic fruit and whole milk, and contains no artificial flavors, synthetic colors or preservatives.

For the fruit layer, I decided to cook it down with a little bit of honey to really bring out the flavors and give it a nice jam-ish texture. I wasn’t sure about it at first since I’ve only cooked down fruit like that for pies and pastries, but omg it turned out to be perfect! If you aren’t familiar with this method it is super simple – all you do is cut up 1-2 cups of fresh strawberries (or any fruit you wish), dump them into a small saute’ pan, add 1-2 tbsp honey and a pinch of sugar. Heat on medium for 5-6 minutes, stirring frequently until you have a chunky/syrupy texture. Next, let it cool for 15 minutes and you are ready to use it. Easy peasy!

I also added in some homemade granola pieces to give it a little crunch, but if you want you can add store-bought granola. I’m happy to say that this might be my favorite popsicle recipe to date. So, let’s make these babies! Here is what you do:

  1. Fill the bottom of your popsicle molds with yogurt up to 1/3 of the way full.
  2. Add in a layer of fruit.
  3. Add in a small layer of granola.
  4. Finish off with a final layer of yogurt.
  5. Freeze, and enjoy!

These are so delicious! If you want to get kids involved, or don’t want to do the layers, you can also mix everything up in a bowl before you pour it into the popsicle molds like the ones below. Either way, you will have a delicious and healthy treat that everyone loves!
