Princess Goldfish Snack Mix

I created this easy princess snack mix in partnership with Goldfish® crackers. All opinions are my own. #GoldfishTales

Kaia is a girly girl through and through. When she was born I was in boy mom mode since Judah was our only other child, and I grew up as a bit of a tomboy so I had always assumed she would follow in those footsteps. But guess what? This girl is all about the sparkle, and I can only imagine it’s going to get worse as she gets older. Right now we have a lot of pink going on around here, and I feel like every other week is a new princess craft or a new glittery playdate. You would think I’d be sick of it by now, but I have actually started to embrace it. When I saw the new Goldfish® Princess crackers baked in the perfect shade of pink I just had to have some! The kids adore Goldfish crackers so we always have some at the house, but this time I decided to get creative and make a snack mix that is perfect for an everyday treat, parties, big kid playdates and more!

I am a sucker for snack mixes. I think it might be the variety out there that draws me, or maybe the fact that it’s like eating four different snacks in one, whatever it is snack mixes are my thing. They are incredibly easy to whip up, and I love that I can make big batches at a time for whatever I need. They’re also great for party favors, in individual snack bags for class parties or sports games and more – the sky is the limit here! Oh, and you can make them out of virtually anything you can think of. You can make healthy mixes, decadent mixes, a little of both…the possibilities are endless. I decided to go with a mix of sweet/savory and combined my Goldfish crackers with cereal, jelly beans, a little white chocolate and sprinkles. I think it’s fabulous!

Here is what you need: 

  • One package of Princess Goldfish crackers
  • One cup of cereal or granola (this one is up to you!)
  • One cup various pink jellybeans
  • One bag of white baking chips
  • Pink sugar sprinkles (I do a tablespoon, but you can do more if you like)
  • Baking sheet lined with wax paper

The first thing you want to do is mix up everything but your white chips and sprinkles.

Now melt your white chips in a microwave as directed on its package in a microwave safe bowl. Once evenly melted, pour into your mixing bowl and blend in immediately (before it hardens).

Spread it in a thin layer over your baking sheet and let it harden.

Now break it up into “chunks” and it’s ready to eat. I don’t know about you, but YUM!

This is such an easy snack to make, and total prep time is less than ten minutes. It’s great for parties and something that bigger kids can easily help make. And speaking of party favors, how about this? Adorable, right?!
