I adore this frosting. I am a huge fan of premium Millstone® coffee because it is made with high quality beans and has a super rich flavor so that is what I’m using here. Before you make the buttercream whip up a batch of chocolate cupcakes. You can make your own from scratch or use a box, either way will be delicious. You already know how little time I have so I went the quick way and used a box mix. Once your cupcakes are made you can start on the buttercream. Here is the recipe:
French Vanilla Coffee Buttercream
You will need:
- stick of unsalted butter
- 1/3 cup vegetable shortening
- 4 cups powdered sugar
- 1/2 cup brewed Millstone® French Vanilla coffee (cooled down)
- icing bag with piping tip
- stand mixer
First mix your butter, shortening and half of your powdered sugar together in your mixer until smooth. Add in the rest of the powdered sugar a little at a time until everything is light and fluffy, then pour in your coffee and mix until thoroughly blended. You *may* need to add more powdered sugar to firm up the consistency, but it should be fine. Ta-da, you have delicious French Vanilla coffee buttercream! Now scoop it all up into an icing bag and pipe it onto your cupcakes.
