We are finally in the home stretch before Christmas (HELLO – less than ten days away!) and I have one final melt-in-your-mouth, ooey gooey recipe full of chocolatey goodness to share with you! I am not usually very good at baking cookies, I prefer cakes and candies, but I was challenged to come up with an amazing cookie recipe last week so I grabbed some supplies and started experimenting. What resulted are these absolutely delicious Andes Mint Stuffed Cookie Bites! Oh yeah, and even though these might look super complicated they aren’t! I usually make things from scratch, but sometimes I’m just way too busy so I like taking a ready made base and transforming it into something completely different – for this I started with a boxed cookie mix and built on it from there. Read on for the recipe!
Andes Mint Stuffed Cookie Bites
Here is what you need:
- 1 box chocolate cookie mix (any kind)
- 1/2 cup flour
- 1 tsp chocolate pudding mix
- 1/3 cup butter
- 1 egg
- 1 package Andes Mints
- 1 can vanilla icing (or any flavor)
- green food coloring
First combine your cookie mix, flour, pudding powder and water in a large mixing bowl.
Stir thoroughly until you have a smooth mixture. Note – this will be fairly thick, so don’t worry if it looks a little dry. The flour makes it less liquid, but helps your cookie bites to not fall flat. Oh yeah, check out my awesome new Sweet Creations spatula – I’m in love!
Next portion out your mix with a cookie dropper, roll them into balls and place them on your cookie sheet.
Bake for around 8 minutes. While those are in the oven go ahead and chop up your Andes Mints (or not if you have the precut baking bag). Combine half of your icing, a few drops of green food coloring and a third of your Andes Mints in a bowl. Mix well and transfer to a piping bag with a wide tip.
By now your cookies should be done baking. Let them cool for five minutes and squirt some icing into each one with your piping bag. Top each one with more icing and finish them off by sprinkling more Andes Mints on top. Don’t they look absolutely delicious?!
