Bakery Fresh Breakfast Sandwich {Recipe}

I am a sucker for a great sandwich.  It is my go to meal when I’m feeling lazy and there are so many ingredient possibilities that I never get bored.  I am somewhat of an experimental cook, so I have been known to get creative with my ingredients and I love thinking up new combinations and using all kinds of different breads. The other day I combined eggs, sweet veggies, and French bread I found at Walmart together to make one super hearty (and delicious) breakfast sandwich.  It’s great for the cold days ahead, and versatile enough to go well with any number of toppings or add-ins.  Now put on your chef hat and get ready to cook!

Bakery Fresh Breakfast Sandwich

Here is what you need:

  • 2 eggs
  • french bread
  • Smoked Gouda cheese
  • green and red bell peppers
  • red onion
  • Country Crock butter
  • black pepper
  • pinch of salt

Feel free to use whatever veggies you like – my husband loves to add mushrooms and jalapenos to his.  You can also try broccoli, tomatoes, or sausage (for the carnivores out there).  First cut your veggies into strips, toss them in a skillet with a tablespoon of Country Crock and saute’ on medium-high heat just long enough to get soft.  I normally use oil when I cook veggies, but I like to use butter when I am making eggs because I think it adds a nice richness that oil doesn’t.

While your veggies are cooking, slice up a few thick pieces of french bread.  I LOVE french bread, and when shopping I look for a loaf that is light, fluffy and not dried out.  I have always been a fan of Walmart’s bakery, and they had it on sale the other day so I grabbed a few loaves.  FYI: their bread is awesome and always super fresh!

Once your veggies are soft, set them aside.  Lightly butter both sides of your bread and heat it up in the skillet until the outside is crispy.  Next cook your eggs like you are making an omelet.  I like to get my skillet really hot, add a little butter then pour the eggs in.  After a few minutes I fold once, let it cook and then flip.  Be careful not to overcook them, they only take a few minutes.

Now it’s time to build your sandwich!  Place the egg on top of your bread, add a slice of Smoked Gouda, and top with a heaping spoonful of veggies.

By now your mouth should be watering!  Finish it off with another piece of bread and dig in.  Doesn’t it look delicious?  I love the flavors in this sandwich – the sweetness of the peppers and the smokiness of the Gouda are absolute perfection together.  Oh yeah, by the way, you aren’t going to want to share so make sure there is enough for the whole family!
