Strawberry Sweet Stacks

You all know by now that I have one crazy sweet tooth, and I’m back with a brand new creation!  I love strawberry shortcake, but I’m not a big fan of the inevitable sogginess that happens halfway through my second bite so I’ve come up with a solution.  Read on and find out how to make these easy and delicious Strawberry Sweet Stacks for yourself!

Better strawberry shortcake using sugar cookiesBefore you start, gather your ingredients.  You will need strawberries, whipped cream (I use French Vanilla flavored Cool Whip) and sugar cookies.  Feel free to use already made cookies, but I like to get the premixed  Pillsbury dough for this and shape it with cookie cutters.  If you are using pre-made cookies skip ahead to the next section.

Prepare your area by sprinkling some flour on the surface you plan to use and spread it around to help with sticking.  Do the same for your cookie sheet.  Roll out your dough to desired thickness and start shaping the cookies.  I have these cute heart cutters that I use here, but you can also roll each cookie into a 1 inch ball if you don’t go that route.

Pop your cookies into the oven at 350 degrees for around 10 minutes or until just cooked – we want them to be soft and fluffy, not hard and crunchy.  Let them cool for another 10 minutes.

While they are cooling, cut your strawberries into slices and set aside.  The number depends on personal preference, but you need enough for a few layers on each portion.  Next lay out half of the cookies on a plate or serving tray and add a layer of strawberry slices to each one.

Give each stack a dollop of whipped cream.  This step is easy to go overboard with, so in this instance use the “less is more” motto.

After adding the whipped cream put a cookie on top of each stack and repeat the last step, ending with a whipped cream dollop on the very top of each stack.

Guess what?  You’re done.  Now go enjoy your creation!  This dessert is great as a light snack, but you could also easily serve it at a holiday gathering when you want to wow your guests but are pressed for time.  Want to take these along to a covered dish type occasion?  Do all the prep at home, and when you get to your destination it will only take a minute to “stack” them up!  For a variety add a drizzle of chocolate sauce or caramel on top.
