Easy Peasy Bean Salad

The holiday season is right around the corner.  With that brings parties, intimate gatherings and house guests.  Chances are you’ll have to cook for people, and sometimes that can be a huge task!  (Especially if you have kids!)  I want to share my “go to” dish for the holidays with you.  I don’t remember where I got it from, but I have been making it for years and it is always a huge hit!  It’s super easy to make and takes a quick 15 minutes to prepare.  I hope you like it!

Here’s what you need:

  • 1 can black beans
  • 1 can whole kernel sweet corn
  • 1 red bell pepper (diced)
  • 3/4 cup finely chopped green onion
  • 3 tablespoons chopped cilantro
  • 1 lime
  • 1 tablespoon olive oil
  • 1/4 tablespoon minced garlic
  • 1 teaspoon cumin

 

 

The first thing you do is chop up your green onion, red pepper and cilantro.  Dump them into a large bowl.  Next drain and rinse your corn and black beans and add them to the bowl as well.  Add your olive oil, garlic and cumin to a separate bowl.  Squeeze your lime juice into it and stir.  When blended, pour into the bowl with the rest of your ingredients.  Stir until evenly mixed.  Top it off with a diced avocado and you’re done!

You can let it chill or serve it immediately.  This is an awesome and simple dish that is great for any occasion.  Eat it plain or add some tortilla chips and cheese if you’d like!
