Easy Veggie Pita

It’s no secret that with being a Vegetarian, I love veggies.  They’re crazy good for you, extremely versatile, and with so many different kinds the combinations are endless.  While I love cooking big meals, I don’t always have time to.  So I try to make simple things as much as possible.  If you’re like me and need some quick and healthy lunch ideas, try these veggie pita pockets!  They are super simple and amazingly tasty.  The one pictured is my favorite, but the good thing about this kind of meal is you can really use any filling you want.

Here’s what you need:

-Whole wheat Pita bread. Pre-cut is the easiest so you don’t have to worry about tearing
-Cheese.  My favorites for these are Havarti or Swiss
-Broccoli.  I usually cut mine up so it fits better
-Shredded Carrots
-Soybeans- shelled (fresh or frozen.  If you get frozen just soak in warm water for a few minutes)
Dressing.  I usually use Raspberry Vinegrette, but any kind will do.
Now is the fun part!  First wash all the veggies.  I like to prepare larger batches by rinsing them in a collander and storing them in a big Ziplock bag, that way if I want the same thing tomorrow I can just grab a handful and stuff it.  That’s a less than five minute meal!
I made some strawberries too, but those are for the side.

Next just put all your stuff in the pita, top it with some dressing, and you’re done!  How easy was that?  Now you’ve got a guilt free lunch that’s tasty AND filling!

If these don’t sound like something you would enjoy, there are tons of different pitas you can make.  Here are some of my other favorites.
-Tomato,onion,avocado and hummus
-Cheese, Soybeans, tomato and honey mustard
-lettuce, tomato, banana pepper, pickles, and honey mustard
– “BLT” (veggie bacon, Lettuce, Tomato, swiss)
The possibilities are endless!
